2022 2022 Cavaillon
CAVAILLON is a bright orange melon, sharing a name with the town in southeast France where it is grown. The melon is known for its endless floral aromatics and rich flavor. The Raft Wine CAVAILLON is a skin fermented SAUVIGNON BLANC, a dedication to the melon with it’s beautiful color, texture, and taste.
Baked apple pie, straight from the oven. This wine is just full of those yellow fruits. Evokes feelings of standing in the sun on a crisp Fall day.
On the palate a rich full bodied structure that lingers.
Just northeast of Lake Mendocino is the quaint town of Potter Valley. It’s picturesque in size, just population 650, and a stone’s throw from Mendocino National Forest. Nestled right in the heart of town is the Trails End Vineyard, where we grabbed some Sauvignon Blanc for our 2023 skin contact!
With a nasty frost taking out the typical viognier for this wine, it was fun to experiment with something new! The grapes were picked September 16th and promptly destemmed at the winery. Gentle morning and evening pumpovers were made to ease the wine through primary fermentation. Once dry, it was pressed and sent to neutral oak barrels for 10 months of aging.
